Sardine Burger

A burger, but not as we know it. The tinned sardines can stand up to the robust flavours of the sharp cheddar and onion. And the mayo and gherkins are a winner because the oily sardines love fat and acidity.

Ingredients

  • 1 tin of spiced sardines Mixed ratings!
  • 1 brioche bun
  • Butter
  • 2 slices of mature cheddar
  • Gherkins, finely sliced
  • Tomato, finely sliced
  • Onion, finely sliced
  • Mayonnaise
  • Salt & pepper, to taste

Method:

  1. Slice a brioche bun in two, and toast. Butter the cut sides.
  2. Add 1 or two slices of mature cheddar.
  3. Next the sardines. The ones in spiced olive oil work well. Either heated or straight from the tin. If you decide to heat them, pan fry them on a medium heat – two minutes on each side – before loading them onto the cheese.
  4. Top with slices of gherkin, two thick slices of tomato, slices of onion and mayo.
  5. Season with salt and pepper.
